Here’s a new recipe for you! My first attempt at home made granola. You can play around with this to your taste. I love granola but the shop bought varieties are too full of sugar and other stuff I don’t want in mine and it is soooo easy……..please give it a go and let me know what you think.
I didn’t measure the ingredients exactly just guessed!
probably 3 – 400g of jumbo porridge oats
70g pine nuts
70g sunflower seeds
70g hazelnuts
a handful of goji berries
a handful of raisins
a teaspoon of vanilla extract
2 teaspoons of cinnamon
2 tablespoonfuls of coconut oil
2/3 tablespoonfuls of honey
1/2 orange squeezed
Preheat oven to 140C (fan)
Heat coconut oil and honey in a pan gently until melted, remove from heat and add orange juice, cinnamon and vanilla.
Mix the rest of the ingredients except the raisins and goji berries in a bowl and pour over the coconut oil and honey.
Spread mixture on to a baking tray and bake for 40ish minutes or golden brown stirring occasionally. Remove from the oven and when cool add raisins and goji berries.
